Soil: Pararendzina: a thin layer of rich soil on ”muschelkalk“ (i.e. lime-stone, derived from pre-historic sea shells)      
Harvest: Mid October  
Yield: 3000 l/hectare      
Grape quality on harvest: 21° KMW       
Processing: whole grapes in pneumatic press; without prior mashing        fermentation: large old oak-wooden barrels approx.
14 days at 19°-22° C      
Refinement: large old oak-wooden barrels, on fine lees, for 10 months      
Malo-lactic fermentation: no      
Alcohol: 13.5% vol      
Total titrateable acid: 6,5 g/l      
Residual sugars:  dry  5g/l     
Recommended serving temperature: 13° C       

Taste:
ripe apple, quince, melon, lime, grapefruit, fresh honey, white almond, salty minerality, brisk acidity, rich structure, long and elegant finish.

To drink 15 years.
